Well, considering it could impact your abililty to go on a date, I’d say fairly early on. Not the first date, maybe around the third one if you think you’re going to keep dating her.
Otherwise, if you have to cancel at the last minute because of an attack, she may be angry or have hurt feelings because she thinks you’re playing games with her.
My mom has IBS and unavoidably soiled herself in the parking lot as we were leaving a store. I think it would be much more embarrassing for you if this happened and she didn’t already know you had a medical issue.

that’s more of a second date topic, unless you didn’t get any on the first date in which case i’d wait until the third.
